Ingredients:

 

 

4 boneless, skinless chicken breasts

1 cup mayonnaise (for a healthier option, use plain Greek yogurt in place of the mayo)

1/2 cup Parmesan cheese

1 tsp seasoning salt

1/2 tsp black pepper

1 tsp garlic powder

 

 

 

Directions:

 

In a bowl, combine the mayonnaise (or yogurt if substituting), cheese, and the seasonings.
Spread the mixture on top of each of the chicken breasts.

Place chicken into a baking dish and bake in a preheated oven, 375, for about 45 minutes, or until cooked through.
Serve warm!

Baked Zucchini

 

 

Ingredients:

 

2 medium zucchini sliced into ½” rounds

1 tablespoon olive oil

½ teaspoon Italian seasoning

salt & pepper to taste

⅓ cup Parmesan cheese shredded, divided

 

 

 

 

Directions:

Preheat oven to 425°F.
Toss zucchini slices with olive oil, seasoning, salt & pepper and about 2 tablespoons of the parmesan cheese.

Place on a baking sheet and top with remaining Parmesan cheese. Bake 5 minutes.
Turn oven to broil, place pan near the top and broil 3-5 minutes or until cheese is melted and zucchini is tender crisp.
